Pressure Cooker Low Carb Porcupine Meatballs


One of my favorite childhood dinners was porcupine meatballs and I have been itching to make them since Matthew and Tassie bought me a pressure cooker!  This is my low carb version.  I have added the original recipe link below but I made some changes. . . and made it work with my pressure cooker.

For the meatballs:
1 pound ground beef
1/2 brown rice (I wonder if quinoa would work)
1 large egg
2 tablespoons parsley
1/4 cup onion
1 clove garlic
1 teaspoon chili powder
1/4 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon sea salt
1/4 teaspoon black pepper

For the sauce:
1/2 cup yellow onion
1 clove garlic
1 15 ounce can of tomato sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon oregano
1/2 teaspoon basil
 1/4 teaspoon red pepper flakes
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup water
1 tablespoon parsley
1/2 cup brown rice

Instructions:
1. Mix ground beef, rice, egg, parsley, onion, garlic, chili powder, oregano, red pepper flakes, sea salt, and black pepper in a medium bowl until completely combined.
2. Shape into balls about 1 1/2 inch to 2 inches in diameter. Set aside.
3. Mix together ingredients for sauce.
4. Set pressure cooker to "saute" and poor in sauce.  When it begins to bubble carefully add the meatballs.
5. Cancel saute, lock lid on cooker, and set to 30 minutes. Let cooker naturally release for 15 minutes and then release steam.

Matthew was the inspiration for this one!  He made a delicious chicken salad for Sunday dinner one day and I was in love. It was such a hit he wouldn't even let me take any left overs home.  Meany! Easy Chicken Salad 1 Rotisserie Chicken, cooled, skinned, de-boned and cubed ½ medium onion diced ½-1 Granny Smith apple diced 3-4 celery stocks diced ¼ cup slivered almonds ¾ - 1 cup Mayo ½ cup light sour cream 1-2 tablespoons dried dill (to taste) Salt and Pepper to taste Mix all ingredients on a bowl.   Chill.   Enjoy! Notes:   We have also used grapes instead of apples.   I also like to add diced tomatoes once and a while.   Chopped olives and dill pickles also make a nice addition.  

Oriental Chicken Salad

(Ignore the roman noodles in the photo...I made it for work so I did put those in) Salad: 1/2 head of cabbage 1/2 Bag Romaine Lettuce Diced Chicken Breast green onion, chopped 1/2 C. Celery (finely chopped) 4 T. toasted almonds Toss all salad ingredients in a large bowl. Dressing: 1/2 tsp Stevia (powder) Sea Salt pepper 3/4 c. oil (I used Canola) 1 tsp Sesame Seed oil 2 T. white vinegar 1 T. Soy Sauce 2 pkg Ramen flavoring (The regular version of this recipe has two packets of Top Ramen crumbled in the salad.  You can decided if you would like the extra carbs or not, I chose not) Add all Dressing ingredients into shaker cup.  Shake well before serving.  Do not put on salad until it is ready to serve or it will become soggy. I give it a 4 star rating! YUM YUM
